It’s summertime in Chicago! For me that generally means, less time in the kitchen and more time outside. I’m always looking for a meal that I can whip up in no time and doesn’t make me feel sluggish. While skimming through recipes on Youtube, I came across the perfect meal.

    This recipe incorporated every veggie I love, especially avocados. I decided to do my own spin on this rendition and add a few cooked shrimp to the salad. The protein packed sea creatures add the extra umph that I was looking for. Then I scooped the salad in the leftover avocados and made little boats.
